Here Are 5 Ganesh Chaturthi Festive Food Recipes To Prepare At Home:

1. Kaju Kothimbir Vadi Recipe

 Ingredients Of Kaju Kothimbir Vadi

  • 1 cup gram flour (besan)
  • 30 cashew nuts
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 2 green chillies, finely chopped
  • 1 Tbsp tamarind pulp
  • Salt, to taste
  • 4 Tbsp oil + to shallow fry
  • 2 Tbsp fresh coriander, finely chopped

How to Make Kaju Kothimbir Vadi

  • In a mixing bowl, combine all the ingredients except oil.
  • Add 1 1/2 cups of water and mix well to make a very thick batter.
  • Heat 4 tablespoons oil in a frying pan over low heat.
  • Add the prepared batter and cook, stirring continuously, for 15 to 18 minutes till the mixture comes together to make a thick doughy batter.
  • Remove from heat.
  • Grease a small tray and spread the mixture evenly 1 inch thick.
  • Set aside to cool and steam it for at least 30 minutes so that it sets.
  • Cut into 2-inch squares.
  • Heat the oil in frying pan and shallow-fry the squares till golden and crisp.
  • Remove and drain on absorbent paper.
  • Serve hot with coriander chutney, mint chutney or ketchup.

2. Puran Poli:

Ingredients Of Puran Poli
For mixture:

  • 1 cup Chana Dal (washed)
  • 3 cups Water
  • 1 cup Sugar
  • 1 tsp Cardamom Powder
  • Nutmeg, grated
  • For making dough:
  • 2 cups Maida
  • 1 tsp Salt
  • 2 tbsp Ghee
  • 1 cup Water

How to Make Puran Poli
Prepare Dal Mixture:

  • Take Chana dal in a pressure cooker, add water and pressure cook it for about a minute (3-4 whistles).
  • Drain the water and mash it coarsely.
  • Now in a pressure cooker pour the mashed dal and add sugar.
  • Mix it thoroughly and cook slowly.
  • Add cardamom powder along with grated nutmeg to it and mix thoroughly.
  • Continue stirring on low flame until it gets dry.
  • Let the mixture cool down.
  • Prepare the dough:
  • Take maida in a bowl.
  • Add salt and ghee. Mix well.
  • Add sufficient amount of water and make a semi-soft dough.
  • Wrap the bowl with a plastic sheet or damp cloth and leave it for 30 minutes.
    Prepare Puran Poli:
  • Make flat balls out of the dough as we make for chapatis.
  • Dust it using maida flour and roll it in round shape with a roller.
  • Fill the Puran (stuffing) in it and then cover the edges. Roll it out again in round shape.
  • Heat Tawa and cook the Puran poli on both sides with lots of ghee.
  • Puran Poli is ready to eat.
  • Serve it hot with some more ghee poured over.

3. Varan Bhaat

Ingredients Of Varan Bhaat
For the tadka:

  • 4-5 tsp groundnut oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 5-6 curry leaves
  • 2-3 slit green chillies
  • 3 cloves garlic, chopped
  • 1 small piece of ginger
    For the paste:
  • 1/2 grated coconut
  • 3-4 cloves garlic
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
    Salt to taste
  • Toor / ahrar dal (Pre boiled
  • 1/2 cup water
  • 1/2 tsp coriander leaves, to garnish

How to Make Varan Bhaat

  • Prepare a paste of coconut, garlic and cumin seeds and keep aside.
  • Heat oil in a pan. Prepare a tadka of mustard and cumin seeds, curry leaves, slit green chillies, garlic and ginger.
  • Now add the coconut paste to the pan along with turmeric powder, and salt.
  • Saute for 5 minutes till the tadka turns red.
  • Add pre-boiled dal and water. Wait for one boil. Varan is ready.
  • Garnish with coriander and serve with rice.

4. Shrikhand:

Ingredients Of Shrikhand

  • 1 1/2 Cups dahi
  • 1/4 cup sugar, powdered
  • 1/2 tsp cardamom powder

How to Make Shrikhand

  • Place the dahi in a strainer lined with a thin cloth, and leave to drain the extra water. Takes about 1 hour, depending on the richness of the dahi.
  • Transfer the strained dahi into a mixing bowl and add the sugar and half the cardamom and mix well, till smooth.
  • Transfer on to a serving bowl and garnish with the rest of the cardamom powder.
  • Leave to set in the refrigerator, chilling for at least 2 hours and serve.

5. Sabudana Vada:

Ingredients Of Sabudana Vada

  • 1 Kg Potatoes (peeled and mashed), boiled
  • 1 Cup Sabudana
  • 2 tsp Salt or sendha namak (rock salt)
  • 1/2 Cup Peanuts (coarsely pounded)
  • 1 tsp Chilli powder
  • 1 Tbsp Coriander leaves, chopped
  • 1 tsp Green chillies, chopped
  • 1 Tbsp Lemon juice
  • For deep-frying Oil

How to Make Sabudana Vada

  • Wash the Sabudana and soak covered with water for about an hour.
  • Drain in a colander, and mix in potatoes, salt, peanuts, chilli powder, coriander, green chillies and the lemon juice.
  • Form mixture into flat, round vadas and fry in hot oil.
  • Serve hot and crispy.
